Farm Fresh Peach Filling


Peaches are one of summer’s answers to quenching anyone’s appetite for something sweet and refreshing. Fuzzy on the outside, soft pale straw yellow to deep burgundy on the inside, their fragrance fills the air with a warm days perfume.

Here is an easy and versatile recipe for peach filling. You can make it in your toaster oven or on top of your grill. It’s great for pies or rustic tarts. It is also great to use as a topping. Pour it over ice cream. Add it to plain yogurt. Serve it with pancakes, waffles or crepes, or just make it into a simple dessert by plating it with whipped cream and candied ginger.

Ingredients

3 Large ripe peaches

Brown sugar

Honey

Cinnamon or Ginger

Procedure

  1. Pre-heat your oven to 350°F.

  2. Line a small baking pan with aluminum foil. Spray it with oil or brush it with butter.

  3. Wash, pit and cut the peaches into eights. Leave the skins on. It gives off a beautiful red color that transforms the drippings into a glorious sauce.

  4. Place the peaches on the pan. Sprinkle them generously with brown sugar, drizzle with honey and top with you choice of spice.

  5. Bake them for 10 minutes. Remove them from the oven. Turn them over and bake them for another 10 minutes.

  6. Remove the pan from the oven and allow it to cool on a cookie rack.

  7. When completely cooled, fill a pre-baked crust or store the filling in an airtight container in the refrigerator where it will keep for several days.
