Fortified Blueberry Buttermilk Muffins


This is a slim, lean, power house of a muffin. It's satisfying and packed with flavor, without the fat and about one-third less of the sugar of its former self. I also added some hemp protein powder to bulk up and boost up the fiber content. A nice alternative to start the day.

Ingredients

Gluten-Free Flour 350 g

Hemp Protein Powder 30 g

Sugar 150 g

Salt 5 g

Baking Powder 15 g

Applesauce 100 g

Finely Chopped Prunes 60 g

Eggs 3

Lemon Zest 1 lemon

Vanilla 2 tsp

Buttermilk .75 cups

Blueberries 2 cups

* Optional - top with oatmeal before baking

Procedure

  1. Combine the flour, sugar, salt and baking powder and set aside.

  2. Finely chop the dried prunes.

  3. Add the prunes, applesauce, vanilla, lemon zest and eggs to a mixing bowl.

  4. Using a paddle attachment, beat until light and thick, about 5 minutes on high speed.

  5. Mix in the buttermilk and flour.

  6. Fold in the blueberries.

  7. Allow the batter to rest for 5 minutes. This will allow the hemp to hydrate.

  8. Scoop into baking cups and bake at 350˚ for about 25 to 30 minutes.

  9. Cool on a wire rack.

Makes 12 large muffins
