Volume Equivalents of Dry Ingredients

If you do not have a scale to weigh out the ingredients for a formulas I’ve posted this will give you estimated values to work with. Please be aware that they are just that, estimated values. They should work fine for small quantities. However they should not be used if you’re planning to make large quantities. For best results, you should weigh your ingredients.

Ingredients Amount Un-Sifted Sifted

Bread Flour 1 lb = 3 1/3 cups 4 cups

1 cup = 4.75 oz 4 oz

Cake Flour 1 lb = 3 ½ cups 4 ¼ cups

1 cup = 4.5 oz 3.75 oz

Granulated Sugar 1 lb = 2 1/4 cups

1 cup = 7 oz

Confectioners’ Sugar 1 lb = 3 1/2 cups 4 cups

1 cup = 4.5 oz 4 oz

Cornstarch 1 lb = 3 ½ cups 4 cups

1 cup = 4.5 oz 4 oz

1 oz = 3 ½ tbsp 4 tbsp / ¼ cup

1 tbsp = 0.29 oz 0.25 oz

Cocoa 1 lb = 5 cups

1 cup = 3.2 oz

1 oz = 5 tbsp

1 tbsp = 0.2 oz

Salt 1 oz = 5 tsp

¼ oz = 1 ¼ tsp

1 tsp = 0.02 oz

Baking Powder 1 oz = 2 tbsp

(Phosphate and ¼ oz = 1 ½ tsp

Sodium Aluminum 1 tbsp = 0.5 oz

Sulfate type) 1 tsp = 0.17 oz

Baking Soda Same as Baking Powder

Cream of Tartar 1 oz = 4 tbsp
